Chef'sTips

Mix the Duck Glace with Dijon mustard, orange juice reduction, and red wine vinegar to create a tasty duck and orange dressing.
Spoon into sauces.
Mix with olive oil.
Drizzle onto dishes.
Make the Duck Glace into a Stock (25g / litre), add asian spices, ginger, lemongrass, lime zest and lime leaves to create a tasty duck broth, add skinless confit duck.
