Chef'sTips

Stir into jugged hare or venison casserole to enrich and bring out the flavours.
Whisk into a reduced balsamic vinegar and olive oil dressing to finish a warm pigeon breast salad.
Add a fruit flavour to it such as plums to bring out the depth of taste.
Why not use it as a warm drizzle, mixed with olive oil and blackberry puree and balsamic to create an interesting dressing.
Rub into rabbit loins before pan frying for a warm rabbit salad.
Mix into a cooked game terrine mix before moulding to set in the fridge.
