

500g aubergine – sliced into rounds
43g Essential Cuisine Indian Inspired Korma Seasoning
5g salt
5g chilli powder
300g gram flour
5g salt
600ml water
Essential Cuisine Street Food Chef Bombay BBQ Inspired Sauce to dip
Preheat a fryer to 190°c.
1. In a large bowl, take the aubergine slices and add 25g of the Indian Inspired Korma Seasoning, salt and chilli powder. Mix well and leave to stand for 10 minutes.
2. In another bowl combine the gram flour, 18g Indian Inspired Korma Seasoning and salt, then gradually whisk in the water to make the batter.
3. Remove any excess liquid from the aubergine before placing into the batter and then into the fryer. Do this in batches as not to overcrowd the fryer.
4. Once removed, season with salt and serve with a chutney of choice.
5. Use the Street Food Chef Bombay BBQ Inspired Sauce as a dip.
