

3kg Beef brisket, prepped
1L Essential Cuisine Signature Beef Jus
200ml Rich Sauces Alfee’s Tomato Ketchup
60g Essential Cuisine Street Food Chef American BBQ Style Seasoning
100g Onion (roughly chopped)
100g Carrot (roughly chopped)
2g Bay leaf
2g Rosemary
2g Thyme
300g runny honey
15–20g dried chilli flakes or 2–3 fresh red chillies, sliced
500g Crispy onions
1. Add the beef brisket to an oven proof dish, then place all the ingredients except the crispy onions in with the beef, including 200g of the honey and the chilli flakes or fresh chillies.
2. Braise for 2–3 hours at 160°C or until the beef is cooked through. Remove the beef from the stock and place on a plate.
3. Once the stock has cooled, remove it from the oven proof dish into a sealed container and put it in the fridge overnight.
4. Once the beef has cooled, wrap in cling film, then place in the fridge and press overnight.
5. Remove the stock from the fridge, strain the sauce and place into a suitable sauce pan. On a low heat slowly reduce until it becomes thick, then add the remaining 100g honey and continue reducing until sticky and glossy.
6. Remove the beef from the fridge, cut into desired size, place the beef in a clean oven proof dish, then bake in the oven at 170°C for 10 minutes until hot all the way through. Coat with the reduced hot honey stock and roast at 200°C for 3–5 minutes until sticky and crispy.
7. Serve in a bowl with cocktail sticks and the crispy onions on the side to dip them into.
