

2 whole cauliflowers
125g Essential Cuisine Classic Béchamel Sauce Mix
16g Essential Cuisine Cheese Stock Mix
25ml Olive oil
10g Essential Cuisine Street Food Chef Zesty Chermoula Seasoning
10g Spinach
1ltr Water
150g Mixed grated cheese (any of your choosing)
1. Mix the Béchamel Sauce Mix and Cheese Stock Mix with the water and bring to the boil, simmer for about 3 minutes, whisking constantly.
2. Whilst the bechamel is cooking. Prep the cauliflower, take off the leaves and keep too one side. Steam the cauliflower whole for 4 Minutes.
3. With the Leaves, add them to a suitable oven tray, sprinkle the Street Food Chef Zesty Chermoula Seasoning and oil and bake for 5 minutes until soft. Add to the blender and blend with the spinach to make the no waste pesto for garnish.
4. Add the cauliflowers to ovenproof serving bowls and pour over the cheese sauce. Top with the cheese and bake in the oven until golden. Serve with the cauliflower waste pesto.
