Ingredients...

Ham and Mushroom Filling

200g white onion, peeled and diced

20ml olive or rapeseed oil

500g button mushrooms

8g Essential Cuisine Mushroom Stock Powder

125g Essential Cuisine Classic Béchamel Mix

1ltr cold water

300g cooked gammon or ham, diced

5g mixed dried herbs
 
Cobbler

525g self raising flour, sieved

20g dried mixed herbs

300g margarine or butter, diced

10g Essential Cuisine Light Vegetable Stock Mix

10ml water

2 eggs, beaten

Method...

  1. In a pan, sweat the onion in the oil for 2-3 minutes, add the button mushrooms and cook for 5 minutes.

  2. In a jug mix the water with the Essential Cuisine Mushroom Stock Mix, Essential Cuisine Classic Béchamel Mix and dried herbs, place into a clean pan and bring to the boil, once boiled, simmer for 5 minutes. Remove from the heat and add the mushrooms and ham.

  3. Place the flour, herbs and Essential Cuisine Light Vegetable Stock Mix into a bowl. Add the butter and mix well. Slowly add the water, mixing well to form a soft dough.

  4. Roll out to about 1cm to 1.5cm thick and cut out into rounds of desired size. 

  5. Spoon the ham mix either into one large serving dish or individual ramekins and top with a cobbler round.

  6. Brush with egg wash and place in a pre-heated oven set at 170 degrees and bake for 30-40 minutes until golden.
