Recent studies show that more people would like to eat more seafood due to the many factors that are increasing consumer interest, such as the health credentials - particularly in oily fish. Consumers are becoming progressively aware about their health and immunity due to the current climate and fish can be an excellent source of protein and vitamin D.
The new lifestyle movement, “seaganism", a diet that excludes all animal products except sustainable fish and seafood - innovation in this particular sector is rising massively. Chefs are thinking far beyond traditional seafood formats in our waste conscious and health conscious world. We’re now seeing everything from seaweed crisps, seafood hotdogs to salmon jerky. Not to forget about all of the comforting options including fish pie, fish and chips, fish fingers and scampi.
