10 x 150g salmon fillets
600g Greek yoghurt
20g Essential Cuisine Aromatic Base
20g ginger & garlic paste
5 tbsp garam masala
5 tbsp smoked paprika
20ml lemon juice
15g Essential Cuisine Lobster Glace
FENNEL SLAW
500g fennel, finely sliced
100g savoy cabbage, finely sliced
100g onion, finely sliced
100g apple, finely julienned
200g natural yoghurt
50g mango chutney
20g Essential Cuisine Aromatic Base
BBQ SAAG PANEER SALAD
450g paneer
500g baby spinach
100g olive oil
50g onion, finely diced
10g Essential Cuisine Aromatic Base
10g ginger & garlic paste
1 green chilli – deseeded & diced
1 tsp garam masala
1. In a bowl mix together the Greek yoghurt, 20g Essential Cuisine Aromatic Base, 20g ginger & garlic paste, lemon juice, 5 tbsp garam masala and smoked paprika
2. Add the salmon and marinate for 1 hour
3. In a bowl mix together all the fennel slaw ingredients and set aside
4. Preheat a BBQ
5. BBQ the paneer for 1 minute each side. When cooked, dice and add to the rest of the saag paneer ingredients and mix well
6. Add the salmon to the BBQ cooking for around 3 minutes on each side
7. Serve platters for family style dining
