40ml distilled vinegar
½ teaspoon salt
1 clove garlic, peeled and crushed
1 tsp Essential Cuisine Peanut Free Satay Style Seasoning
1 large cucumber
1 shallot, peeled and thinly sliced
1 red chilli, deseeded and finely chopped
2 tbsp chopped coriander
2 tbsp chopped dry roasted peanuts
1. Prepare the dressing. Mix all the dressing ingredients in a pan and bring to the boil. Simmer for 2 minutes, or until the salt and sugar have dissolved.. Transfer to a large bowl and leave to cool.
2. Cut the cucumber into quarters lengthwise, then into ¼ inch slices. Add the cucumber to the dressing.
3. Add the shallot, chilli and coriander and toss to mix. Leave to marinade for about 1 hour.
4. Serve, topped with the peanuts.
