250g basmati rice
8g Essential Cuisine Light Vegetable Stock
15g Street Food Chef Chermoula Seasoning
500ml water
150g shallot, peeled & finely diced
10g garlic, peeled & crushed
200g courgette, diced
200g plum tomatoes, diced
30g spring onion, finely sliced
200g feta, crumbled
1 green chilli, finely chopped
20ml lime juice
15g mint, finely chopped
15g coriander, finely chopped
5g tarragon, finely chopped
Dressing
60ml olive oil
20ml lime juice
Pinch of sugar
Salt to taste
1. Whisk all the dressing ingredients together & set aside.
2. Soak the rice in cold water for 20 minutes, then rinse well in a sieve. Place the rice in a saucepan with the Essential Cuisine Light Vegetable Stock, Street Food Chef Chermoula Seasoning & water, bring to the boil then place a lid on for 5 minutes, then take off the heat for 10 minutes still covered. While still warm add 45ml of dressing and leave to cool.
3. Meanwhile, place the oil in a frying pan over a high heat & cook the shallot garlic & courgette, until cooked with a little colour. Transfer to a large salad bowl to cool.
4. Toss the vegetables, rice, tomatoes, feta, spring onion, lime juice & chilli. Check the seasoning, add the rest of the dressing & herbs. Serve.
