Ingredients...

1.2kg boneless leg of lamb, diced

10g salt

150g onion, peeled

50g garlic

6g cumin seeds

75ml olive oil

72g Essential Cuisine Spicy Persian Style Seasoning

10 metal skewers

5 lemons, halved and grilled

Method...

  1. Preheat a grill to maximum.

  2. Grate the onion into a bowl, add the salt and leave it until the liquid start to come out.

  3. Push the onion through a sieve into a large bowl, add the garlic, cumin, olive oil and Essential Cuisine Spicy Persian Style Seasoning. Add the lamb and leave for 1 hour to marinate.

  4. Thread the lamb onto the skewers, and place under the hot grill. Cook for 3 minutes on each side.

  5. Serve with bread, rice, salad and sauce of your choice.
