7tbsp Maple syrup
3tbsp harissa
75g Essential Cuisine Zesty Chermoula Seasoning
75ml olive oil
35g or 5 cloves garlic
Pinch of salt
1.5kg baby carrots – peeled
100g pistachios – chopped
Preheat oven to 200c.
Mix in a large bowl the maple syrup, harissa, Essential Cuisine Zesty Chermoula Seasoning, olive oil, garlic and salt. Add the carrots, then toss until well coated in the mixture.
Spread the carrots out ion a baking tray, cover with foil & roast for 20 minutes until tender. Remove the foil and roast for a further 10 minutes to allow the carrots to caramelise slightly.
Place in a serving dish and sprinkle with the pistachios. Serve immediately.
