- Preheat a grill to maximum.
- Grate the onion into a bowl, add the salt and leave it until the liquid start to come out.
- Push the onion through a sieve into a large bowl, add the garlic, cumin, olive oil and Essential Cuisine Spicy Persian Style Seasoning. Add the lamb and leave for 1 hour to marinate.
- Thread the lamb onto the skewers, and place under the hot grill. Cook for 3 minutes on each side.
- Serve with bread, rice, salad and sauce of your choice.
