With Covid having devastated the food and drink industry for much of 2020, the annual event, says Senior Business Development Chef at Essential Cuisine, Jonathan Harvey-Barnes, takes on an even greater significance.
It is almost impossible to walk down the street in one of Vietnam’s major cities without finding a crowd of locals tucking into noodles at a makeshift pho stand. Vietnamese cuisine is packed with vibrant, punchy flavours using fresh, nourishing ingredients, it is often cited as one of the healthiest cuisines in the world.
