

1ltr Essential Cuisine Service Ready American Style Cheese Sauce
62.5g Essential Cuisine Classic Béchamel Sauce Mix
100g cold water
20 Slices of good quality sourdough bread
500g Good quality unsmoked ham
200g Grated gruyere cheese
200g of butter, softened
Salsa:
1/2 Pineapple, peeled and finely diced
2 Red peppers, peeled and finely diced
4 spring onions, finely chopped
1 red onion finely diced
5 plum tomatoes, deseeded and finely chopped
Zest and juice of 2 limes
10g Picked coriander, chopped
50g Olive oil
1. Add the American Style Cheese Sauce to a pan and bring to a simmer. Slurry the Classic Béchamel Sauce Mix with the water and add to the pan whisking continually until incorporated. Bring back to a gentle simmer and cook for 5 minutes stirring occasionally.
2. Transfer the sauce to a tray and spread flat to cool quicky. Refrigerate until required.
3. To build the sandwiches: Butter two pices of bread, then flip one of the pices over and spread a layer of the cheese mix on to the unbuttered side. Add the ham and cover with a layer of the Gruyere cheese. Add the top layer of bread. with the buttered layer facing up.
4. To Make the Salsa: Mix all of the ingredients together in a bowl. Taste and adjust the seasoning as needed. Leave for at least 30 minutes before serving or refrigerate until required.
5. To cook the sandwiches: Heat a heavy based frying pan over a medium heat. Place in the sandwiches and cook on both sides until golden brown and the cheese inside has melted. Add a little extra oil when cooking if required.
6. To serve cut in half and serve with the salsa and extra cheese sauce for dipping.
