Chef’s moving forward featuring Langton Mavuka

We were pleased to chat to Executive Chef, Langton Mavuka from South Coast Nursing Homes about some of the impacts Coronavirus has had on the kitchen operation, adjustments that have been made and what the future looks like in the care sector. 
 
How have the past few months been for you?
 
The past few months have been tough. At times, I have felt very uncertain of the future in terms of job security. Regarding our daily operations, we found that certain products were very limited in terms of availability, and when products did become available, deliveries were difficult to manage due to extended timescales.
 
What changes or safety processes have been put into place to protect you, your team and those you cater for?
 
Many changes have been implemented. First of all, no agency staff are allowed on site and our team was significantly reduced. Temperature checks are recorded at the beginning of each shift and face masks have to be worn each time we leave the kitchen. Dining rooms and communal areas have been closed off, instead, all meals are plated in the kitchen and delivered on a tray to each resident by care staff wearing full PPE. 
 
In terms of your menu, have you simplified your offerings over the past couple of months?
 
Our menus have been altered due to the lack of availability of certain ingredients. For us, fruit and vegetables were most effected as we source them from abroad. Despite these difficulties, we strived to meet the needs and standards of our residents. Essential Cuisine products are a firm favourite. The Stock Mixes are easy to use and store, plus they meet the Department of Health salt guidelines. The Cheese Sauce Mix and Peppercorn Sauce Base are other favourites of ours.
 
Any messages or advice for fellow chefs in the current climate?
 
Chefs, please be careful and stay safe. The pandemic is real and it’s important we follow the government guidance and get tested often.
