

1kg onions - Finely slice the onions and seasoned with the salt
500g gram flour
100g rice flour
550ml cold water
20g cumin seeds - toasted in a dry pan till fragrant
75g Essential Cuisine Indian Inspired Jalfrezi seasoning
25g salt
1. Make a batter by mixing the gram flour, rice flour, salt and water together, then add the Indian Inspired Jalfrezi seasoning and cumin seeds to the batter.
2. Fold the sliced onions through the batter and allow to rest for 30 minutes.
3. Heat the oil in a deep fat fryer to 170c while the Bhaji batter is resting.
4. Spoon 40g bhaji mix into the fryer and cook till golden and cooked through. Take care not to overcrowd the fryer as doing so will cause the oil temperature to drop and the bhajis to come out soggy.
Chef Tip: These are best enjoyed fresh, but can be reheated in a moderate oven for ten minutes if needed. Pair with our Mango Coconut and Lime dressing for an extra kick of flavour.
