

For the French Onion Topping:
200ml Essential Cuisine Beef Stock Mix (made with 16g of stock mix per litre)
10ml Worcestershire sauce
10g Peeled and crushed confit garlic
5g Sugar
2g Chopped fresh thyme
600g Essential Cuisine Kitchen Ready Caramelised Red Onion
Salt and pepper to taste
For the Cheese Sauce:
65g Essential Cuisine Classic Béchamel Sauce Mix
8g Essential Cuisine Cheese Stock Mix
500ml Cold water
100g Grated Gruyere cheese
100g Extra grated Gruyere cheese for sprinkling(optional)
For the Fries:
1.5kg Fresh or frozen skin on fries, cooked as per instructions
10g Finely chopped chives
1. Create the French Onion Topping- In a suitable pan on a medium heat, pour in the Beef Stock Mix, Worcestershire sauce, garlic, sugar and thyme. Bring to the boil, stir in the Kitchen Ready Caramelised Red Onion, bring to the simmer for 5 minutes, stirring regularly, until the topping thickens.
2. Make the Gruyere Cheese Sauce- In a suitable saucepan, whisk the Béchamel Sauce Mix and Cheese Stock Mix into the water. Bring to the boil on a gentle heat, stirring constantly, simmer gently for 5 minutes and remove from the heat, whisk in the grated Gruyere until fully incorporated.
3. Assemble the dirty fries- Arrange the fries onto a serving platter or individual plates. Pour the French onion topping over the fries, then the cheese sauce on top. Garnish with finely chopped chives and extra grated Gruyere(optional), serve immediately.
Chefs Tip: Try sprinkling a little extra grated Gruyere cheese on top of the fries before serving.
