

1kg Skin on fries
1kg Buttermilk chicken
1ltr Rich Sauces Alfees Mango Curry sauce
10g Sea salt
20g Essential Cuisine Indian Inspired Tikka Seasoning
75g Essential Cuisine Kitchen Ready Cooked Onion
75g Sweet peppers
20g Spring onions
10ml Sunflower oil
10g Fresh coriander
1. Cook the chicken in a pre-heated fryer until crispy and core temperature reaches plus 75 degrees.
2. Cook the fries in the pre-heated fryer until crispy.
3. Whist the fries are cooking, heat a large pan/wok with the oil in. Add the peppers, Kitchen Ready Cooked Onions and toss together. Add the fries, salt and Indian Inspired Tikka Seasoning and mix together.
4. Add the picked coriander and sliced springs last minute to keep them bright green and serve.
5. Serve with the Rich Sauces Mango Curry Sauce.
