1kg Cooked Chick Peas – drained and patted dry on kitchen paper
250g Rice flour
50g Essential Cuisine Indian Inspired Keralan Style Seasoning
5 Kaffir lime leaves
1. Mix the seasoning and flour together.
2. Dredge the chick peas in the flour mix and shake off any excess.
3. Fry the chick peas till golden and crisp and drain on kitchen paper.
4. Shred the lime leaves as finely as possible and mix through the chick peas while hot.
Chef's Tip: These are great as a snack or can be used as a crispy garnish to add texture to dishes
