Jerk Glazed Pineapple with Rum Ice Cream

Ingredients...

5 Pineapples, Peeled, Cored And Quartered

2 Litres Water

1 Kg Caster Sugar

2 Chillies, Chopped

100g Street Food Chef Jamaican Jerk Style Seasoning

170g Essential Cuisine Crème Anglaise Powder

1 Litre Whole Milk

100ml Rum

Mint To Garnish

Method...

  1. Bring the water, sugar and chillies to a boil.
  2. Add half the Street Food Chef Jamaican Jerk Style Seasoning and the prepped pineapple. Simmer gently for 10 minutes or until the pineapple is starting to soften. Remove from the heat and allow to cool in the liquid.
  3. Whisk the Essential Cuisine Crème Anglaise Powder, the rum and the remaining jerk seasoning into the whole milk. Simmer for 5 minutes, whisking continuously. Remove from the heat and allow to cool
  4. Churn the Essential Cuisine Crème Anglaise Powder in an ice cream machine until set. Leave in the freezer until needed. Remove the pineapple from the liquid and pat dry. Mark on a high heat griddle.
  5. Serve in a bowl, garnished with the mint, with the ice cream served separately.
