

1kg Potato, peeled and finely diced
600g Carrot peeled and finely diced
400g Onion peeled and finely diced
150g Essential Cuisine Indian Inspired Tikka Seasoning
200g Filo pastry
1kg Essential Cuisine Curry Onion Sauce
5g Garam masala
5ml Lime juice
1kg Chickpeas
1ltr Zafron Foods Absolutely Saucesome Yoghurt & Mint Dressing

Chillies ( Thinly sliced)
1. Gently sweat the potato, carrot, and onion with 50g of the Indian Inspired Tikka Seasoning until soft and well combined. Allow the mixture to cool fully, then place a spoonful onto a sheet of filo pastry and fold into a samosa shape. Repeat until you have 30 samosas.
2. Simmer the Curry Onion Sauce with the remaining Indian Inspired Tikka Seasoning, garam masala, and lime juice for 2 minutes. Add the chickpeas and return to a gentle simmer for a further 2 minutes, then remove from the heat.
3. Deep fry the samosas until golden brown and crisp. Drain well on kitchen paper.
4. Spoon a portion of the chickpea curry into each bowl. Place three samosas on top, drizzle with the Absolutely Saucesome Yoghurt & Mint Dressing, and garnish with pea shoots and thinly sliced chillies.
