Chap Chae are clear glass noodles made from sweet potato. These noodles can be stir fried and served hot but are really tasty when done as a cold salad. This dish is fresh, colourful and can be made as spicy as you like – like the famous Thai green papaya salad.
Salad
1.25kg glass noodles
500g carrot – cut into julienne
500g spinach or any Asian greens
300g spring onion, finely sliced
80g red chilli peppers, deseeded and finely sliced
500g green beans, chopped 5cm and blanched
Dressing
80ml Honey
60ml Rice Vinegar
60ml Fresh lime juice
50g Toasted sesame seeds
1. Wash and prepare the vegetables and set aside.
2. Blanch the noodles in salted water till just cooked and retaining some bite. Refresh them under cold water to arrest the cooking process.
3. Place all the dressing ingredients into a pan and bring to a simmer. Take of the heat and allow to fully cool.
4. Combine all the salad ingredients with the dressing and allow the flavours to develop for 30 minutes before serving.
Chefs tip: You can add roasted and crushed peanuts to this dish for added texture.
