Bombay Inspired Tikka Smash Burger

Bombay Inspired Tikka Smash Burger

Ingredients...

 

For the Tikka Spiced Lamb Smash Burgers:

2.5kg minced lamb (80/20 fat content for juicy burgers)

100g Essential Cuisine Jalfrezi Seasoning

Salt and pepper to taste

Vegetable oil for griddling

 

For the Crispy Onion Bhaji:

3 large onions, finely sliced

300g gram (chickpea) flour

1 tbsp cumin seeds

1 tbsp ground turmeric

1 tbsp ground coriander

Salt and pepper to taste

150ml cold water (approx.)

Vegetable oil (for deep frying)

 

For the Burger Build:

10 brioche burger buns, lightly toasted

1 baby gem lettuce, shredded

4 large tomatoes, sliced

300g pickled green chillies, sliced

Fresh coriander leaves (for garnish)

300ml Essential Cuisine Street Food Chef Bombay BBQ Inspired Sauce 

Method...

Prepare the Tikka Spiced Lamb Smash Burgers:

1. In a large bowl, combine the minced lamb, Essential Cuisine Jalfrezi Seasoning, and a pinch of salt and pepper.

2. Divide the mixture into 10 equal portions (around 250g each). Roll each portion into a ball and refrigerate for 30 minutes to firm up.

3. Preheat a large griddle or flat-top grill to high heat.

4. Lightly oil the grill and place each lamb ball onto the surface.

5. Using a heavy spatula or burger press, smash each ball flat until around 1.5cm thick. Cook for 3-4 minutes on one side until crispy and caramelised.

6. Flip the burgers, and cook for a further 2-3 minutes or until cooked through.

7. Just before serving, brush each burger with a generous drizzle of Essential Cuisine Street Food Chef Bombay BBQ Inspired Sauce for a rich, smoky, spiced glaze.


Make the Crispy Onion Bhajis:

1. Heat vegetable oil in a deep fryer or large pan to 170°C.

2. In a large bowl, mix the sliced onions, gram flour, cumin seeds, turmeric, ground coriander, salt, and pepper.

3. Gradually add cold water and stir to form a thick batter that coats the onions.

4. Carefully spoon small clusters of the onion mixture into the hot oil and fry for 4-5 minutes or until crispy and golden.

5. Remove and drain on kitchen paper. Keep warm until serving.

 

Assemble the Burgers:

1. Lightly toast the brioche buns.

2. Spread a layer of Essential Cuisine Street Food Chef Bombay BBQ Inspired Sauce on the base of each bun.

3. Add a handful of shredded lettuce and a slice of tomato.

4. Place the tikka spiced lamb smash burger on top and add a crispy onion bhaji for crunch.

5. Top with pickled green chillies and fresh coriander leaves.

6. Drizzle with more Street Food Chef Bombay BBQ Inspired Sauce before closing the bun.
