400g diced onion
3 garlic cloves
2 diced carrots
2 sticks of celery
2kg plum tomatoes
16g Essential Cuisine Vegetable Stock Mix
1ltr of water
Bayleaf and thyme
1.2kg of La Tua Spinach & Ricotta Tortellini
Method...
- Sweat the onion and carrot in a pan for approximately 5 minutes and then add the celery and garlic and cook for a further minute
- Add the remaining ingredients into the pan and bring to a gentle simmer for 40 minutes
- Remove bayleaf
- Blend until smooth, adjust seasoning and pass through a strainer
- Toss the cooked pasta through the sauce and serve
