Ingredients...

280g quinoa

450ml water

6g essential Cuisine Light Vegetable Stock Mix

5g essential Cuisine Cheese Stock Mix

5-6 large broccoli florets, blanched and chopped

1 large onion diced

170g breadcrumbs

140g grated cheese

2 eggs

Salt and pepper

Method...

  1. Cook the quinoa in the water until soft. You may need to add a little more water. Strain and chill.

  2. Cook the onion in a little oil until soft. Add the broccoli and fry for 2 minutes.

  3. Mix all the ingredients in a bowl, leaving the egg for last. You should have a smooth wet mix.

  4. Make 10 patties then flatten slightly.  Fry gently for about 4-5 minutes a side serve warm.
