50g Street Food Chef Peanut Free Satay Style Seasoning
100ml nam pla (fish sauce)
50ml peanut oil
30ml lime juice
50g red chilli, deseeded and finely chopped
200ml coconut milk
10ml gluten free light soy sauce
10g brown sugar
15g fresh ginger, peeled and finely grated
15g garlic cloves, peeled and crushed
15-20g cornflour, mixed into a paste with a little cold water
- Place all the ingredients except the cornflour into a suitable, thick bottomed saucepan.
- Bring to the boil and simmer gently, stirring occasionally for 5 minutes.
- Whisk in the cornflour mix until the correct consistency is achieved, simmer for a further 5 minutes.
- Allow to cool, then marinade your chosen protein/plant based ingredient for a minimum of 3 hours before cooking.
