Mushroom and Cheese Ravioli in Brodo

Ingredients...

1.2kg La Tua Mushroom and Cheese Ravioli

1 onion, peeled and finely diced

1 large carrot, peeled and finely diced

2 sticks of celery, finely diced

1 courgette, finely diced

2 garlic cloves, finely chopped

750ml Essential Cuisine Premier Rich Vegetable Jus

20g Essential Cuisine Wild Mushroom Glace

2ltrs water

Grated Grana Padana, olive oil and micro herbs to garnish

Method...

  1. In a stock pot bring the water to the boil with both Essential Cuisine products in, then reduce to a simmer.

  2. Add all the vegetables and La Tua Mushroom and Cheese Ravioli to the pot.

  3. Cook for 3-4 minutes or until the pasta floats to the top.

  4. Divide the pasta and broth between the serving bowls.

  5. Garnish and serve.
