Ingredients...

250g yellow split lentils (moong Dal)

15g Essential Cuisine South Indian Style Seasoning 

10g fresh ginger, chopped

10g green chilli, chopped

5g salt

150g onion, peeled and finely chopped

3g black pepper

10g coriander, chopped

Method...

  1. Heat a fryer to 180°c.

  2. Soak the lentils in 500ml cold water for 1 hour.

  3. Drain the lentils, then put them into a food processor with the ginger, chilli, Essential Cuisine South Indian Style Seasoning, salt and pepper. Blitz to a smooth paste, adding a little water if needed. Place the mixture in a bowl and whisk for 5 minutes until completely smooth.

  4. Stir in the onion and coriander until they are evenly mixed through.

  5. With a tablespoon carefully drop balls of the lentil batter into the fryer, do this in batches so not to overcrowd. Cook until golden brown, drain on kitchen paper.

  6. Serve warm with a green chutney of choice.
