- Heat a fryer to 180°c.
- Soak the lentils in 500ml cold water for 1 hour.
- Drain the lentils, then put them into a food processor with the ginger, chilli, Essential Cuisine South Indian Style Seasoning, salt and pepper. Blitz to a smooth paste, adding a little water if needed. Place the mixture in a bowl and whisk for 5 minutes until completely smooth.
- Stir in the onion and coriander until they are evenly mixed through.
- With a tablespoon carefully drop balls of the lentil batter into the fryer, do this in batches so not to overcrowd. Cook until golden brown, drain on kitchen paper.
- Serve warm with a green chutney of choice.
