10g salt
12g gochugaru
20g spring onion, thinly sliced
12g garlic, peeled & finely chopped
100ml rice wine vinegar
75g sugar
10g Essential Cuisine Asian Aromatic Base
5g roasted sesame seeds
12ml sesame oil
4 cucumbers, halved lengthways, deseeded & sliced
1. In a large bowl, whisk together the salt, gochugaru, spring onion, garlic, rice vinegar, sugar, aromatic base, sesame seeds and oil until fully incorporated and the sugar has dissolved.
2. Add the cucumber slices and mix to coat. Leave for 1 hour or for best results overnight.
3. Serve.
