5 heads of romaine lettuce – cut in half lengthways
75g melted butter
20g Street Food Chef Chermoula Seasoning
5g crushed black pepper
3g crushed chilli flakes
40ml lime juice
2 preserved lemons – roughly chopped
200ml sour cream
20 anchovies
200g parmesan shavings
Drizzle of olive oil
Salted chilli paste – see separate recipe
1. Preheat a BBQ
2. Mix the melted butter with the Street Food Chef Chermoula Seasoning in a small bowl. Brush the cut side of the romaine lettuce
3. Place cut side down on the BBQ & char for 4 minutes. Take off the heat & place in a large bowl, with the pepper, chilli flakes, lime juice, preserved lemon & sour cream
4. Place the lettuce in a serving dish. Scatter over the anchovies, parmesan, olive oil, remaining dressing & some of the salted chilli paste
