Deep Fried Red Pepper and Goats Cheese Ravioli

Ingredients...

800g La Tua Red Pepper and Goats Cheese Ravioli

500g red onions

1kg mixed colour heritage tomatoes

2 fresh red chillies

150ml red wine vinegar

280g brown sugar

10g Essential Cuisine Vegetable Stock Mix

Method...

  1. Pre-heat a fryer to 180°c

  2. Peel and finely slice the onions, roughly chop the tomatoes and de-seed and finely slice the chilli

  3. Put everything in a pan, season to taste and stir everything to combine. Simmer for 30 - 40 minutes or until a jam like consistency is formed

  4. Cook the ravioli until crisp or until they float to the surface of the fryer

  5. Divide the ravioli between the starter plates with a small bowl of chutney to serve
