Ingredients...

3 racks baby ribs

1 ltr cola

1 ltr water

10g Essential Cuisine Pork Glace

8g Essential Cuisine Ham Stock Mix

100ml apple juice

100g ketchup

10g honey

10g wholegrain mustard

2 tbsp gluten free Worcestershire sauce

30g soft brown sugar

10g Essential Cuisine Pork Glace

1 tbsp chilli flakes

Method...

1. Boil the cola and water with the 10g Essential Cuisine Pork Glace and Essential Cuisine Ham Stock Mix. Simmer and cook the ribs until soft.

2. Mix the remaining ingredients and simmer gently until reduced by about half.

3. When the ribs are cooked, remove from the stock and brush with the reduced marinade. Leave for 2-3 hours, keeping a little marinade separate for brushing on later.

4. Cook over a medium heat for about 15 minutes, turning occasionally to ensure the marinade does not burn. Brush with the remaining marinade for the last 2-3 minutes. The ribs are now ready to serve.
