200g white onion, finely chopped
50ml olive oil (or vegetable oil)
800g tinned chopped tomatoes
16g Essential Cuisine Light Vegetable Stock Mix
10g dried oregano
6 fresh basil leaves, ripped
1. In a suitable pan gently fry the onion and oregano in the oil without colour until soft over a medium heat
2. Add the tomatoes and Essential Cuisine Light Vegetable Stock Mix, bring to the boil and simmer for 20 minutes, season to taste and stir in the ripped basil leaves
3. Should a smooth sauce be required, simply puree with a stick blender
