Ingredients...

170g Essential Cuisine Crème Anglaise Mix

Pinch of grated nutmeg

1g cinnamon

1 ltr whole milk

1 tea bag

50g dried cranberries, chopped

75g dried mixed fruit

50g mixed peel

50g glace cherries, chopped

50g goji berries

25ml brandy

Method...

  1. Mix the Essential Cuisine Crème Anglaise Mix with the grated nutmeg, cinnamon and milk. Bring to the boil, whisking continiously. Simmer for 3 minutes, still whisking, strain and set aside to cool.

  2. Boil the water in a pan with the teabag. Pour over the dried fruit, leave for 5 minutes. Strain and add the brandy to the fruit.

  3. Churn the Essential Cuisine Crème Anglaise in an ice cream machine until thick and stable. Mix the fruit though and freeze until needed.
