Ingredients for the spiced chicken:
16 boneless, skinless chicken thighs
75g Essential Cuisine Zesty Chermoula Style Seasoning
500g full fat Greek yoghurt
125ml pale ale
2tbsp honey
Salt and pepper
For the wraps:
10 burrito size flour tortillas
1 shredded romaine lettuce
1 large red onion, finely sliced
2 red peppers, thinly sliced
For the dressing:
250g full fat Greek yoghurt
1 large bunch of coriander
Lemon juice
Salt and pepper
Method...
- In a large bowl, mix the seasoning well into the chicken meat until fully coated.
- Stir in the yoghurt, ale and honey, season to your taste, cover and marinade overnight in the fridge.
- Meanwhile, for the dressing, blend the yoghurt, coriander and lemon juice until bright green, season to taste.
- Place the chicken in a roasting tray and cook in a hot oven till piping hot in the centre, leave to rest.
- To make the wraps, slice the chicken into strips, divide the lettuce, onion and peppers equally over the tortillas. Top with the sliced chicken, drizzle with the dressing and wrap.
