100ml olive oil
1.25kg lean braising steak, diced
500g chorizo, diced
300g onion, diced
200g carrots, peeled and diced
200g parsnips, peeled and diced
100g celery, diced
1ltr Essential Cuisine Signature Red Wine Jus
30g fresh parsley, chopped
- Heat oil in a suitable pan over a high heat, in batches fry the diced beef until brown, remove with a slotted spoon and place in a bowl.
- Over a medium heat add the chorizo and onion to the pan and fry until the oil from the chorizo is released, add the carrots, parsnips and celery and fry for a further 2-3 mins.
- Pour over Essential Cuisine Signature Red Wine Jus, bring to a simmer and return the beef to the pan, cover with a tight-fitting lid and braise in the oven for 2 hours or until the beef is tender.
- Stir in the chopped parsley, season to taste with salt and freshly ground black pepper.
