60 butter - plus extra for greasing
2 onions - finely chopped
4 cloves garlic - finely chopped
Few sprigs of thyme - leaves removed
1.5kg pork mince
100g Street Food Chef American BBQ Style Seasoning
200g breadcrumbs
4 egg yolks
30ml milk
5g fresh nutmeg - grated
Olive oil for brushing
Salt and pepper
1. Preheat an oven to 200ºc.
2. Melt the butter in a large frying pan over a medium heat until it starts to foam, add the onion and sauté for 15-20 minutes until softened and lightly golden. Stir in the garlic and thyme, cook for a further minute or 2. Remove from the heat and let cool.
3. In a large mixing bowl add the pork mince, Street Food Chef American BBQ Style Seasoning, breadcrumbs, egg yolks, milk, the cooked onions, nutmeg and season well. Mix well and place into a greased loaf tin. Brush the top with a little olive oil and place in the oven for 20 minutes. Then turn down the heat to 160ºc and cook for a further 30 minutes until its cooked through. Remove from the oven, cover in foil and leave to rest for 10 minutes.
4. Remove from the loaf tin, carve and serve with mashed potato and BBQ sauce.
