Top tips

  • When making stews, casseroles and braises, make the demi-glace mix into a slurry with cold water first, then stir this into the hot meat juices and bring to the boil.
  • For a less beefy taste, try a 50/50 blend of Veal Demi-Glace and Beef Demi-Glace – simply combine the mixes and cook up together.
  • Similarly you could blend it with our Premier Chicken Jus or Premier Lamb Jus.
  • For a great non-specific savoury base, try a 50/50 blend of Classic Veal Demi-Glace and Classic Chicken Demi-Glace.
