Game Glace
This authentic game reduction will save you time, allowing you to concentrate on creating the final dish. Use just as you would any reduced stock; it has an excellent taste profile and is free from artificial preservatives and colours. Spoon the glace directly into your sauce bases, reductions, meat juices or stews. Use it as a glace, thicken it to make a jus or make a perfect nage. Why not use it as a warm drizzle, or mix with olive oils to create an interesting dressing. Once opened the jar should be kept in the refrigerator.
February 2011 - The Game Glace recipe has been refined to give a stronger game flavour with the inclusion of Venison Stock.
Ingredients when reconstituted: Venison Stock (Water, Venison Stock, Garlic, Herb and Spice Extracts), Beef Stock (Water, Beef Stock), Maltodextrin, Salt, Yeast Extract, Glucose, Red Wine Extract.
Allergen Advice: Contains: No Allergens Gluten free

“At Christmas, we rely on Essential’s Game Glace as a stock reduction for our sauces and as an integral element of our dressings. Before we discovered them, we would use any red wine as a base for sauces and in the likes of our redcurrant sweet oil dressing, but Essential glace is the business, quite unique.” Paul McMahon, Leather's Smithy

Game and Sweet Blackcurrant Drizzle
INGREDIENTS:
Essential Cuisine Game Glace 50g
Soft Set Blackcurrant Jam 100g
Balsamic Vinegar 50g
Olive Oil 150g
Salt & Pepper To Taste
METHOD:
Blend all ingredients together and pass through fine sieve. Pour into Essential Cuisine drizzle bottle. This drizzle is so versatile: Use with smoked meats and terrines. The subtle taste of game and juniper blended with sweet blackcurrant adds extra dimensions to shellfish and meat. How about a new look at surf and turf, summer madness with a touch of winter warmth.
