However, quality ingredients which are simply not versatile or easy to use can prove costly when you cater for everyone from high flying business folk doing lunch to happy couples and their 100 or so guests at a full on wedding banquet. It seems to be one hard knock after the other for the pub industry and they don’t come worse than a recession. However, plenty of watering holes are simply refusing to lie down and are going all out to use their creative nous to pull in the punters and save money without comprising on quality.

Five young hotshots have made it to the nerve wracking last leg of the race to become the most promising culinary property in the region.
The county heats of the Essential Cuisine-sponsored North West Young Chef of the Year are now wrapped up, with finalists from Greater Manchester, Lancashire, Merseyside, Cumbria and Cheshire ready to pit their talent against each other at MANCAT on Tuesday, June 2nd.

Justin Brown has carved out another notch for his sizzling career after being hailed Meat Pub Chef of the Year at yesterday’s PubChef’s Food Excellence Awards.
The triumphant chef from the Carnarvon Arms in Bughclere, Newbury, was presented with the accolade, sponsored by Essential Cuisine, at a glittering ceremony at Plaisterers' Hall, London.
Justin beat off competition from two other great meat chefs after serving up a red hot double cooked shoulder of Highclere lamb with roast garlic mash, kurly kale and rosemary sauce at a cook-off at the Agriculture & Horticulture Development Board, Milton Keynes, in January.

Essential Cuisine’s Beef Demi Glace has helped secure the East of England Agricultural Society a place in the Guinness Book of Records for the Largest Simultaneous Roast Meal.
The kitchen-made tasting product for professional chefs was mixed with the beef juices to create enough world class gravy to feed the whopping 1,362 people who turned up to eat a Quality Standard British Roast Beef Lunch, and make a mark in history while at it.

A savvy young chef who runs his own reputable restaurant at the tender age of 23 has made it to the last leg of the race to become the most promising culinary property in the North West.
Chris Rawlinson, who did his training at South Trafford College, Altrincham, won Thursday’s Cheshire heat of the Essential Cuisine-sponsored North West Young Chef of the Year.
